Kivonat: | The aim of this research is to discover if the fact that coffee is on a consistent uprise all over the world has any kind of effect on different kind of hospitality establishments and specialty food stores in Budapest, Hungary. My goal is to get to know different kinds of businesses in the hospitality sector from their understanding and their way of thinking about coffee. I plan on looking into this topic from both the costumer’s and the supplier’s point of view. I would like to question participants from the following range of gastronomy: bistro, specialty café, fine dining, confectionery and bakery. I plan on looking into one specific example from each, those who are well known and have been recognized by their peers as well as their customers in doing and providing something better than their competitors. I hope to find out that more and more participants of the gastronomy scene give deeper thought into the coffee they are serving to their customers, regardless of coffee’s importance in their business. |
